At our house, after-school snacks are a constant struggle. First off, my kids seems to always be starving by the time they’re home from school. It’s tough to find a snack that’s fortifying enough to fuel a busy afternoon, but that will leave them hungry come dinner time. My answer? Toast. Not just plain toast, though. I like to add a few hearty elements for a bit of staying power. Good things like nut butters, cheese, or avocado bring a boost of healthy fats and protein. With the right ingredients, a simple piece (or two) of toast transforms into a tasty, satisfying afternoon treat!

2 slices bread, toasted
1 ripe avocado, sliced
1 wedge lemon

Instructions:
