This week, I have been in the mood for light suppers like this salad. I have finally been able to get back in the gym this week after 3 weeks of not being able to go because of skiing injuries. I’ve dropped 4 pounds in 4 days, and although I know most has been water weight, I am hopeful to be down 16 more pounds before swimsuit season hits. One of my New Year’s resolutions was to take my fitness a little more seriously this year. My goal is to do a 5k 6 days a week, plus regular weight training 2 or 3 times a week. That way I can still continue to eat just about whatever I want, so long as I use common sense with my portion control, which can be so hard sometimes. I made this salad with fresh apples, pears and Gorgonzola. The dressing is very light, made with Dijon mustard, apple cider and lemon juice. It’s a perfect light salad to help with your New Year’s resolutions of healthy eating.
Apple Pear Gorgonzola Salad Recipe
1 Apple, cut in slices
1 Pear, cut in slices
1/2 cup pecan halves
4 oz or 1/2 cup crumbled Gorgonzola
1 -7 oz bag mixed greens salad
3 tablespoons apple cider
1 tablespoon Dijon mustard
1 tablespoon freshly squeezed lemon juice
3 tablespoons olive oil
salt and pepper to taste
1. Add sliced pears and apples, lettuce, pecans and Gorgonzola to a large salad bow.
2. In another bowl, mix apple cider, Dijon mustard, lemon juice and olive oil. Mix well and drizzle over salad.
