Artichoke Chicken Pasta Recipe

1 jar of marinated artichokes hearts

2 chicken breasts

1/2 package of angel hair pasta

1 cup chicken broth

1 tablespoon fresh parsley

1 tablespoon canola oil

salt and pepper to taste

parmesan cheese to taste

Bring pot of water to boil for the pasta. Cut chicken into 1 inch cubes and lightly season with salt and pepper. Heat canola oil in a cast iron skillet over medium heat and add the chicken. Pour the liquid from the artichoke hearts into the skillet with the chicken. Cook for about 6 minutes, then flip the chicken, add the chicken broth and cook for an additional 6 minutes or until cooked through. Add the artichoke hearts, then the cooked pasta, tops and heat through. Top with fresh parsley and parmesan cheese and serve.
