When my husband travels for work my daughter and I have fun diving into making our own dinners. We love picking fun ingredients and recreating our absolute favorite foods. Of course, we do this with my husband too, but when he is away I don’t worry if we don’t make a hugely substantial meal. One of the things we’ve been making a lot this summer are mini pizzas in mini muffin tins. It is so simple to do and they are a blast to eat. Since they are so portable we can easily pop them on a tray and eat them out on the deck for a fun picnic, too. I’ve even saved the extras and reheated them the next day for an easy lunch. Enjoy!
Bite-Sized Mini Muffin Pizzas
1 ball pizza dough
1/2 lb mozzarella, chopped
1/2 – 1 cup pizza sauce
1. Preheat the oven to 425F. Have the kids pinch enough pizza dough off of the ball to press into the bottom of a mini-muffin tin. Top it with a spoonful of sauce and one or two small cubes of mozzarella.
2. Bake the pizzas for about 8 to 10 minutes or until the cheese is melted and the dough is puffed up. Allow to cool slightly before popping them out of the tin with a mini offset spatula. Enjoy!
