Breville 5-Quart Stand Mixer Giveaway and Pumpkin Picante Cupcakes

Pumpkin Picante Cupcakes adapted from David Arrick of Butch Bakery

3/4 cup of all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 cup unsalted butter (1/2 stick), softened
1/2 cup granulated sugar
1 egg
1/2 teaspoon vanilla extract
1/2 cup pumpkin puree

Maple/Brandy Cream Cheese Frosting
8 ounces cream cheese, softened
1/4 cup unsalted butter (1/2 stick), softened
1 cup confectioners’ sugar
1/8 cup pure maple syrup
1 tablespoon brandy
2 teaspoons cinnamon

Preheat oven to 350° F. In a large bowl, sift together the flour, baking soda, salt and spices.

In a Breville stand mixer, blend together butter and sugar until smooth and creamy. Add in eggs and beat, and then add in the vanilla and beat. Turn the mixer to low speed and alternate adding in small amounts of the flour mixture and the pumpkin puree until all is incorporated. Mix only until all the dry ingredients are wet.

Fill a cupcake pan lined with baking cups until cups are 2/3 full. Bake at 350° F for 20-23 minutes until tops of cupcakes are firm and bounce back when touched. Remove from pan and let cool completely on a cooling rack.

While the cupcakes are cooling, beat cream cheese until smooth. Add in butter and mix together. Slowly beat in powdered sugar until fluffy, about 3 minutes. Add in maple, brandy and cinnamon and beat to incorporate. Frost cooled cupcakes with the frosting.
