Chocolate or Mocha Root Beer Float

I didn’t think I liked Root Beer Floats. Soda and ice cream seemed like a silly kiddie treat at best. But this Mocha Root Beer Float – oozing with foamy, chocolate, fizzy, vanilla bean bliss – a hint of rich espresso – made me a float fan. This recipe can be adapted to suite the tastes of kids (the mocha turns into simple chocolate). And you can even make this float dairy-free/vegan like I did. Get the recipe and step by step photos …

Dairy-Free. To make this a dairy-free float, use coconut, soy or rice based vanilla ice cream. Use soy or rice whipped cream.

Mocha Root Beer Float
makes one float

3 small scoops vanilla bean ice cream (any variety)
* I used Coconut Milk ice cream which gave the entire float a tropical accent

1 can or bottle of root beer – use as much as fills your glass – add more as you drink if you’d like
swirl of whipped cream – any variety
* I used soy whipped cream

1 tall parfait/milkshake glass

1. Add vanilla ice cream
2. Add chocolate syrup.
3. Add espresso – or root beer. Add root beer until foams to top.
