They other day my daughter came home from school and requested to make cupcakes. Immediately. She didn’t want to wait for me to get out her favorite Crumbs Vanilla Cupcake recipe and start making the batter from scratch. She wanted those babies in the oven and baking within minutes! So, I turned to the box cake mix I always store in the cabinet for those just-in-case moments and we got to work. To have some fun we decided to swirl together chocolate and vanilla mixes and top them with buttercream frosting that had been blitzed together with Oreo cookies. The result were these over the top marbled cupcakes that kind of looked like Oreos, and a creamy crunchy frosting that was studded with bits of chocolate wafer. They were a kid-friendly concoction to be sure, she couldn’t get enough of them!
Chocolate Vanilla Marble Cupcakes with Cookies-n-Cream Buttercream Frosting
1 box Chocolate Fudge cake mix
1 box French Vanilla cake mix
1 container Vanilla Buttercream frosting
16 Oreo sandwich cookies
Makes 2 dozen cupcakes
1. Preheat the oven to 350ºF.
2. Prepare the mixes according to the box instructions. Line two muffin tins with liners and fill each cup half full with the chocolate batter, followed by an equal amount of the vanilla batter. Swirl them together with a straw very briefly, or leave them as is. Continue this with the remaining batter. Bake cupcakes according to box directions.
3. Empty the buttercream frosting container into a food processor and add the oreo cookies. Blitz them together until the cookie crumbs are evenly incorporated into the frosting.
4. Once the cupcakes have cooled top them with the buttercream frosting and serve.
