Churro Swirl Banana Bread
Makes 2 large loaves
1 cup butter, softened
1 cup sugar
2 tablespoon vanilla extract
4 cups all purpose flour
2 tsp baking powder
6 very ripe bananas
1 cup sugar
4 Tablespoons cinnamon
Preheat oven to 350 degrees. Spray two large loaf pans with nonstick baking spray.
In a stand mixer, cream together the butter, sugar, and eggs and vanilla extract and mix well. Add the flour, baking powder, and bananas mix just until combined.
Gently spread a thin layer of batter on the bottom of each bread pan. Sprinkle generously with cinnamon-sugar mixture, then spread a second layer on top and repeat 5 times, finishing the loaf off with cinnamon-sugar mixture. Bake for 50-60 minutes, or until loaf springs back when touched in the center. Run a sharp knife around edges to loosen bread from sides of pan. Let cool in pan on wire rack for 10 minutes. Remove from pan, slice, and serve warm with butter or top with ice cream and caramel sauce for an incredible dessert!
