Dinner in 5: BBQ Chicken CrostiniBrooke McLay
The perfect Sunday meal is a giant crockpot filled with pork ribs slathered in barbecue sauce and cooked until tender. We serve it over rice, or shred it for pulled pork sandwiches. The next day, it makes the most magical dinner. We turn it into easy crostini. It’s like french bread pizza, but seven times more awesome. A meal you really ought to make tonight.
BBQ Chicken Crostini
- 1 cup pulled BBQ pork (storebought or homemade)
- 1 cup monterey jack cheese, shredded
- 2 tablespoons cilantro
- 4 slices sourdough french bread
Preheat oven to 450 degrees. In a small bowl, stir together the pork and cheese. Mound onto top of french bread, sprinkle with cilantro, and bake until the cheese is bubbly. Enjoy!
