Dinner in a Flash! 25 Quick Shrimp Meals!

Happy New Year! I don’t know about you but where we live the kids don’t go back to school for a few more days. I’m still running around, squeezing in movies, outings, and every last bit of “out-of-routine” fun I can before we’re back to the grind.

I took a little break from cooking regular meals over the holidays but am now slowly making my way back into the kitchen. I’m not quite ready to succumb to full-on meal prep though, so for now I turn to shrimp.

Having a bag (or in my case, several bags) of frozen shrimp on-hand means that a yummy meal is pretty much at the ready. I prefer frozen shrimp because most shrimp at the market has most likely been frozen previously, making it tricky to determine how long it’s been thawed for. With frozen shrimp you thaw it when you need it. Simply defrost in the fridge overnight – or in a pinch, take it out of the package, place in a bowl of cold water and let a trickle of cold water run into the bowl while the excess water goes down the drain. The shrimp will be ready to go in about 15 minutes (tip courtesy of Fine Cooking).
