Easy Autumn Party Eats: Vegetarian Minestrone Soup for a Crowd


Pull out the biggest pot you’ve got and pull together this incredible homemade Minestrone Soup. It’s delicious, hearty, and perfect for serving up to a whole room full of people you adore. All you need to make it a party is a loaf of French Bread and lots of creamy butter for slathering on slices and dipping in the soup!

Vegetarian Minestrone Soup for a Crowd

  • 1/4 cup butter
  • 3 cups celery, chopped
  • 3 cups carrots, chopped
  • 3 cups onions, chopped
  • 3 cups zucchini chopped
  • 5 quarts tomato juice
  • 6 cups water
  • 3 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 tablespoon basil
  • 1/2 teaspoon marjoram
  • 1 can canneloni beans
  • 1 can kidney beans
  • 1 can garbanzo beans
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 1/2 cup mini pasta

In a large pot, melt butter over medium-high heat. Saute onions, carrots and celery in butter until are golden. Add juice, water, the beans and spices.
