The other day, I headed to my kitchen needing a simple and filling meal. I’ve been eating way too much cereal lately, so I was looking for something really healthy and delicious. A quick look in the fridge and inspiration struck I’d make some easy baked eggs, and add a few veggies for flavor. I was surprised at how easy it was to make such a delicious lunch. And since baked eggs are made in individual portions, this is a terrific recipe whether you’re feeding one or ten.
As we head into spring, baked eggs are also a great option to have at the ready since they are so versatile and go well with classic springtime ingredients like spring onions, garlic, chives, young greens, or mushrooms.
