Easy Gingerbread Waffles for Christmas MorningKelsey Banfield
We are a big waffle family and I am always looking for new ways to doctor up our favorite morning breakfast dish. In the spirit of the holidays the other week I decided to make gingerbread waffles. It was really quite simple and they tasted absolutely amazing. I topped mine with a quick lemon curd, but my daughter opted for the more traditional maple syrup drizzle. If you happen to have a gingerbread man pancake mold you could use this mix to make pancakes. Shaped as gingerbread people shapes they would look so cool!
Easy Gingerbread Waffles
1 batch favorite pancake/waffle mix
2 tablespoons molasses (not blackstrap)
1/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
2 tablespoons butter, plus more as needed
1. Mix one batch of your favorite mix according to package directions. Whisk in the molasses and the spices. Cook the waffles in your waffle maker according to directions. Serve!
