Fast and Easy Salads Featuring Winter Fruits!

Ah, February. Holidays are long over, here in New York we are buried – literally – under mountains of snow, and spring seems farther away than ever.

Oh – and resolutions.

Like many of you, I vowed on December 31 to eat better this year. Less junk, more healthy foods, fewer “processed” ingredients.

Salads are a natural, yet I mostly feel uninspired to make them during the winter months. Especially fruit salads. Summer is such a cornucopia of fresh, gorgeous produce that it just feels easier to toss a salad together when the weather is warm.

But I’ve got us covered – while stone fruits and berries are yet to come, there are plenty of delicious fruits that are at their peak right now – and I’ve rounded up some inventive salads that feature these beauties!
