Flour Free Baking! The secret ingredient: Whole rolled oats! In a flash, using your high speed blender or food processor, you can process whole grain rolled oats into a sort of rustic and nutty homemade oat flour. You can keep the oats slightly textured for more textured cakes and muffins. The results when baking with this homemade oat flour are moist and soft and slightly nutty in the same way a bran muffin is silky and texture. For even smoother cakes and muffins, process the oats for a longer period of time until they are silky smooth.
How-To: Simply add your favorite brand of rolled oats to your processing appliance and start blending. My Vitamix takes about 2-3 minutes on low to turn my oats into soft, nutty flour.
You can use this flour in the same way you would use traditional flour, however note that it tends to be a tad drier, so slight liquid modification may be needed if you are using this oat flour as a substitute in your favorite baking recipes. Add about 1/4 cup more liquid for every 1 cup of oats used in place of flour. Once you start experimenting with this flour you will get a better feel of the texture and how it bakes up.
Note that the “batter” when using this homemade oat flour will be much thicker and more textured than a traditional cake batter. But that is ok! You will see how the baked goods still bake up moist and soft once the liquid absorbs into the oats during baking.
This oat flour works really well in whole grain muffins, carrot cake, zucchini bread, pancakes, waffles and other textured baked goods.
