Happy Friday with this Frozen Peachy Lychee Lime Daiquiri. This tall, frosty glass is your instant ticket to straw-sippin’ bliss. And yes, this daiquiri can be made two ways: virgin or not. Lychees are one of my favorite exotic fruits to blend into smoothies and daiquiris. They have a creamy sweet texture similar to a peeled grape or mandarin orange. They almost become creamy when blended. And I have a secret for making them extra luscious…
Freeze Those Lychees! And bananas. My trick for making the best lychee blended bevies is the freeze the lychees. I like to drain the lychee can juice into an ice cube tray. Then freeze the whole lycheese as well. I’ll also have frozen peaches on hand and freeze my own sliced bananas for this recipe. By freezing both the lycheese and the bananas the result is an ultra icy beverage that almost feels like sorbet or a thick shake. No watery daiquiris here!..

Now since you busy moms and dads out there do have the option to make this sip alcoholic – there are two ways to do that:
1) Add in 1-3 shots of vodka or rum.
2) Substitute the fruit juice with sparkling wine for a fizzy blended.
Frozen Peachy Lychee Lime Daiquiri (virgin version, see above for non-virgin substitutions)
makes 2 servings – tall glass
1 2/3 cups fruit juice, your choice (best bets: orange, pineapple, peach or guava juices)
6 whole lychees, frozen
3/4 cup frozen peaches
1 large frozen banana
1 lime, squeezed
3/4 cup ice cubes (plain water or coconut water)
1/4 cup lychee juice ice cubes (frozen from can liquid)
optional add-in: handful of fresh strawberries. Or a handful shredded raw coconut.
garnish: lychee or peach fruit – or a lime wedge
Blend. Serve. Sip. Enjoy!
