Smoked Salmon and Spinach Salad with Artichoke Hearts
Prep Time: 10 minutes
3 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon prepared horseradish
1 teaspoon Dijon mustard
sea salt and pepper to taste
4 cups baby spinach leaves, rinsed
1 shallot, minced
4 ounces smoked salmon
1 can artichoke hearts, drained and quartered
To make the dressing, whisk the lemon juice into the olive oil. Add the Dijon and horseradish, and a small pinch of sea salt.
Place the spinach and shallot in a large bowl. Drizzle with half the dressing, and toss to coat. Arrange the artichoke hearts and smoked salmon on top; finish with another drizzle of dressing and sea salt and pepper to taste.
