Homemade Crock-Pot Spaghetti-Os

Makes: 3 servings

Soup Ingredients

  • 1 (14.5 ounce) can crushed tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried basil
  • Pinch black pepper
  • 16 ounces vegetable broth
  • 1 cup unsweetened coconut milk
  • 8 ounces “o” shaped pasta (uncooked)

Meatball Ingredients

  • 1 egg white
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon dried basil
  • 8 ounces ground turkey
  • 4 tablespoons rolled oats
  • Oil (for cooking)
  • Pinch salt (optional)
  • Pinch pepper (optional)

Directions

  1. Whisk together all of the soup ingredients (except the pasta), cooking in the slow cooker on high for 2 1/2 hours.
  2. While your soup is cooking, make your meatballs by whisking together the egg and spices. Then add in raw ground turkey and oats, combining well.
  3. Form meat into meatballs with your hands or a melon baller, and cook in an oiled skillet until browned on all sides.
  4. Once your soup has cooked, add in your meatballs and uncooked pasta. Cook for an additional 40 minutes. Then enjoy!
