Homemade Gushers

Makes: 24 gushers per flavor

Raspberry Flavor Ingredients

  • 1/2 cup raspberry preserve
  • 1 teaspoon lemon juice
  • Piping bag and tip
  • 1 cup fresh raspberries
  • 3/4 cup white grape juice
  • 2 tablespoons honey (or other sweetener), optional
  • Cheese cloth (optional, like this one from Amazon)
  • 4 packets unflavored gelatin powder (or vegan gel)
  • 2 tablespoons water
  • Silicon molds (1-inch cavities that hold 0.5 ounce each)

Blue Raspberry Flavor Ingredients

  • 1/2 cup raspberry preserve
  • 1 teaspoon lemon juice
  • Piping bag and tip
  • 1 cup fresh blueberries, packed tightly
  • 3/4 cup white grape juice
  • 2 tablespoons honey (or other sweetener), optional
  • 4 packets unflavored gelatin powder (or vegan gel)
  • 2 tablespoons water
  • Silicon molds (1-inch cavities that hold 0.5 ounce each)

Directions

  1. For both flavor varieties, place raspberry preserve and lemon juice into a blender and purée. Pour into a piping bag. Set aside.
  2. Place remaining ingredients except gelatin and water into blender and purée until smooth. For the raspberry flavor, if you’re not a fan of the seeds, filter out with a cheese cloth.
  3. Place purée into a saucepan. Heat on low until warm.
  4. Mix gelatin packets and water in a bowl, then add to warm purée mixture immediately. Stir until gelatin is dissolved. Continue heating until just simmering, not boiling.
  5. Remove mixture from heat and pour into a measuring cup. Then pour into molds halfway. Place in refrigerator for 20-30 minutes, until the Gushers are firm yet malleable.
  6. Use piping tip to form a bit of a hole in each mold. Pipe in a small dollop of filling directly in the middle (do not overfill or let filling reach the sides of the mold).

  7. Top with rest of gelatin mixture to fill molds to the top.
  8. Refrigerate for at least 4 hours, until completely firm. Pop out of molds and enjoy!
