My friend Christine is originally from Sichuan Province, China. To see her in the kitchen is a thing of magic and mystery. She uses chopsticks for everything. And I mean everything. In her delicate hand, chopsticks become an art form. Of course she eats with them, but she stirs and sautes with them too. In fact, I’ve even seen her make meatballs with chopsticks.
Now, to say that my chopstick skills are marginal would be a compliment. But there is one fleeting moment when the chopstick becomes a magical wand in my clumsy hand, just as it does for Christine.
That moment occurs when I’m making Christine’s Spicy Dipping Sauce. It’s no crazy, fancy technique as you’ll see in the video, but there is something magical that happens. And if you try this recipe, I hope you’ll use a chopstick too.
