After juicing fresh lemonade the other day, we were left with a dozen little lemon remnants, of which my daughter promptly asked,” can’t we do something with them? They are so cute!” So, rather than tossing our lemon cups in the trash, we made a quick little iced lemonade smoothie, poured it into each of the cups, then popped them in the freezer until a sunny afternoon begged them come anon. Here’s how to make these easy, refreshing treats.
- 6 lemons, sliced in half and juiced in a hand juicer
- 1/2 cup sugar
- 1 cup ice
- 1 cup water
Use a grapefruit spoon to gently remove the pith from the center of each lemon rind. Set each lemon half on the countertop, if it doesn’t stand sturdily upright, slice a small, flat piece from the bottom of the lemon to make a solid base.
In a blender, combine the lemons, sugar, water, and ice. Pour the blended ice mixture into each cup. Gently transfer the cups to the fridge and freeze until ready to serve.
To serve the lemon mixture like more of a granita, add an additional 1/4 cup of sugar to the ice mixture, blend, then grate the ice mixture with a fork every 15 minutes or so as the cups freeze.
