Broccoli is one of those veggies that most kids and adults actually love to eat. It’s tender and mild in flavor – and I mean who doesn’t like chomping on mini trees, right? But sometimes it’s fun to jazz up the flavor of broccoli with a quick dressing. I came up with this zingy dressing one evening and have been tossing my broccoli in it ever since. Lemon. Pepper. Yum.

Tahini. I love it! I keep it in my fridge as a must-have staple. A small spoonful can enhance a wide variety of veggie dishes. Salads love this stuff! Carrots, greens, cabbage slaws – pretty much any veggie will be happy getting a drizzle of tahini.
I like to mix tahini with apple cider vinegar, lemon juice, seasoned rice vinegar or another acid. Then sometimes I’ll add a drizzle of olive oil and maybe a sweetener like agave or maple syrup.

Lemon Pepper Tahini Broccoli
1 large bunch of broccoli, organic (broken into florets)
Lemon Tahini Dressing
4 Tbsp tahini
3 Tbsp lemon juice
2 Tbsp apple cider vinegar
2 Tbsp olive oil
1/2 tsp fresh ground black or rainbow peppercorns
Whisk together the dressing and set aside.
Steam your broccoli florets until tender.
Toss the broccoli in the dressing.
Serve warm – or stick in the fridge until chilled and dressing thickens a bit.
*I like it best chilled, but warm is delish too.
