Cook like a chef! A cartoon chef, that is! Inspired by Beauty & The Beast, this simple tomato soup can be made in minutes but tastes like you’ve just visiting a five-star restaurant! And, why not? When Chef Bouche is asked by Candelabra to put on a spread for his guest, he pulls out all the stops!
Encourage your kids to eat healthy without boring them to pieces. This quick and simple recipe is topped with little grilled cheese croutons for extra flavor and fun! Cut a few fresh sage leaves into hearts for added whimsy. Then, grab a spoon and enjoy!
Chef Bouche’s Tomato Soup du Jour
- 1 (15 ounce) can of no-salt added tomatoes (or try oven roasting your own fresh tomatoes)
- 1/2 cup light coconut milk
- 1/4 teaspoon salt
- 2 slices wheat bread
- 1 slice reduced fat cheddar cheese
- 1 teaspoon butter
Place tomatoes and coconut milk in a large saucepan. Stir in salt. Heat over medium heat just until hot. Spread butter on one side of each slice of bread. Place cheddar cheese between the two slices of buttered bread, butter side out. Fry in a grill pan until golden brown on both sides. Allow to cool slightly before slicing into “grilled cheese croutons.” Top soup with croutons. Serve and enjoy!
