Do you have a culinary black hole? You know, the place where all gourmet recipes requiring special skills, ingredients and equipment go — to never be made? Gnocchi used to be mine; it just didn’t seem possible to me. I mean, homemade pasta? From potatoes?
Well, I second guessed myself the whole way through my first batch. Is this too much flour? Am I overworking the dough? I know these are going to fall apart the minute they hit boiling water.
Full disclosure? My kitchen was truly a disaster, but I produced a mound of pretty well-shaped, firm, yet pillowy knots of pure potato delight. I had five gnocchi casualties (that exploded on impact with the boiling water as predicted) but I have officially rescued Gnocchi from my culinary black hole.
