Mashed Sweet Potatoes for Thanksgiving

Want an alternative to the traditional starchy mashed potatoes to serve this Thanksgiving?  How about mashed sweet potatoes? They’re quick, simple and naturally sugary. Mashed Sweet Potatoes with Orange Juice – Makes 4 Servings
What you’ll need: {Recipe compliments of Louisa Shafia, eHow Food Rachael Ray Buddy}
2 pounds sweet potatoes, peeled and cut into 1-inch chunks
2 to 4 tablespoons unsalted butter (add in as much as you like)
1/4 cup freshly squeezed orange juice
Salt and freshly ground black pepper

What to do:
1. Place the potatoes in a medium pot and cover with cold water. Place the pot over medium-high heat and bring the liquid up to a bubble. Boil the potatoes until tender, 10 to 12 minutes. Drain.

2. Transfer the potatoes to a large mixing bowl (or the pot that they were cooked in) and add the butter, orange juice, and some salt and pepper. Mash to the consistency you like or, for a silky smooth texture, transfer them to the bowl of a food processor and pulse until smooth. Transfer to a serving dish and serve immediately.
