Looking for healthy heart-shaped fun? Then these whole wheat mini muffins are just the thing. Made with whole wheat flour, yogurt, apple, banana, and mixed berries, they’re as healthy as they are delicious. After all, nothing says “I love you” like wholesome, nutritious food.
Mixed Berry Mini Muffins
makes 24 mini muffins*
2 1/2 cup whole wheat pastry flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup sugar
1 1/3 cups yogurt
1/2 cup apple sauce
1/4 cup mashed banana
1 cup blueberries (fresh or frozen)
1/2 cup raspberries (fresh or frozen)
Preheat oven to 375 degrees and grease a muffin tin.
In a medium bowl combine the dry ingredients. In a larger bowl combine the yogurt, apple sauce, and mashed banana. Gently fold the dry ingredients into the wet, stirring as little as possible. Next, gently fold in the berries. Spoon into the muffin tins, filling each cup about 2/3 of the way up. Bake for 25 – 30 minutes, or until golden brown.
Well-wrapped, these muffins keep fine for a day or two, but are best enjoyed day-of.
*Makes 12 full-size muffins. Increase cook time by 10 minutes.
