Mufasa’s Mane Butternut Squash Spaghetti

I think we can all agree that Mufasa from The Lion King has a fabulous mane. I mean, who wouldn’t follow his lead? Besides his pesky younger brother Scar, of course.

This spaghetti is as beautiful as Mufasa’s mane but decidedly more delicious. Topped with a homemade butternut squash sauce, it is healthy and nutritious in addition to tasting buttery and flavorful.

Mufasa’s “Mane” Dish Spaghetti
Serves 6

  • 2 cups cooked butternut squash
  • 1 Tablespoon olive oil
  • 1/3 cup chopped onion
  • 1/3 cup chopped red pepper
  • 2 garlic cloves, put through a garlic press
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup half & half
  • 2 teaspoons sugar
  • 1 Tablespoon tomato paste
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon pepper
  • 1/4 teaspoon coarse salt
  • 6 cups cooked whole-grain spaghetti

Heat olive oil in a large pot over medium heat. Add onions and red pepper. Cook until soft. Add garlic, stir. Add broth, half & half and cooked butternut squash to pan and stir. Add sugar, tomato paste, sage, pepper and salt. Let simmer about 5 minutes. Puree sauce in a blender. Makes about 3 cups of sauce.

Serve over spaghetti.
