Pasta salad skewers are fun. Fun for the kids to eat and even more fun to make. Pasta Salad Skewers are my ‘go to’ dinner or lunch whenever I’m too tired to really cook. Pasta Salad Skewer Recipe
1 package cheese tortellini
1 red bell pepper
1 orange bell pepper
1 pint of grape tomatoes
fresh basil leaves
Cook the tortellini according to the package. Cut the peppers into 1 inch pieces and wash the basil and tomatoes. Make sure the kids know about the pointy end of the skewer, make one for them to watch, then watch as the kids have a ball assembling. Place finished skewers on a serving plate and drizzle with Italian dressing. Serves 4.
