Philly Cheese Panini – with a twist

My husband’s favorite sandwich has always been a classic Philly Cheesesteak. Those thick layers of melting cheese, plump roasted peppers and onions, and of course plenty of thinly sliced steak. He was hooked. But lately he has been lightening up his diet and enjoying a new vegan-ish lifestyle. So he gave in and tried a vegan Philly-Cheese Sandwich. He was skeptical at first, but after a taste test – he was wildly impressed. And his new craving is for this easy vegan recipe..

Trust me, don’t judge it until you’ve tried it! Give it a whirl!..

Veganized. Spicy seitan sausage slices, red peppers and gobs of vegan cheddar cheese. Oil-brushed bread is grilled into panini perfection.

Ingredients. So you may be working with a few ingredients that are “new to you” – and that’s the fun part.

First off, you’ll need a *good* seitan “steak” substitute. I say *good* because there are indeed yummy and not so yummy vegan fake meat brands out there. One of my favorites is Field Roast vegan sausages. The spicy chipotle flavor works perfectly for this recipe. Spices built in!

Next, you’ll need some cheese. Vegan cheese. Daiya cheddar is great for this recipe because it melts easily and has a savory robust cheddar flavor. And if you can find Daiya Cheese’s new Pepper Jack flavor – try that as well. I personally haven’t spotted it in stores yet. But it would be delicious for this panini.

And lastly, those lovely peppers and onions. I like to do a quick pepper roast on my stove top, slice them thin and place them on my sandwich. Fast and easy. If you have a bit more time you can saute the peppers and onions in olive oil in a saute pan, with some spices, garlic and whatever else adds a boost of Philly Cheese flavor.

Then comes the easy part: panini pressing it! Or you can use a stove-top grill pan or even a basic skillet (although you won’t get those pretty grill-marks.

Enjoy! And remember, you’ll be saving yourself quite a good number of calories and saturated fat. So although this is still a very decadent sandwich, you can feel a bit less guilt about chowing down.

This sandwich would make a perfect Father’s Day recipe to show dad you and your kids care about his health – and his craving for Philly Cheese..

Vegan Philly Cheese Panini
makes one sandwich

1 Field Roast Spicy Chipotle Sausage, thinly sliced
1/2 cup Daiya Cheddar Cheese
1/4 cup roasted peppers and /or onions
2 slices of thick-cut sandwich bread – brushed with olive oil on both sides (I like a hearty multigrain bread)
optional: spices for a pepper/onion saute

1. First I roast my veggies and prep my sausage by thinly slicing.
2. Then I arrange all my ingredients – open faced on bread and place under broiler in oven for 3 minutes.
3. Then I fold sandwich together and panini press for another 3 minutes.
Slice. Serve!
