Pizza Stone Baked Zucchini FriesMacki West
My little dude, the three and half year old, is on a bit of a veggie strike so I’m trying to come up with recipes that will appeal to him. Sure I could puree veggies and put them into brownies, but I’m still giving my kid a brownie with his spinach. I’d rather give him something he can see and that’s good for him and will get him interested in eating other veggies…again. Last night my husband brought home a huge package of zucchini, something I know my guy won’t eat. I decided to prepare them two ways, our old stand by sautéed and a new trick, baked fries. I used my pizza stone to bake them and they turned out so addicting that all three zucchini’s I made were devoured by all, even the picky one!
3 medium zucchini’s
italian seasoned breadcrumbs
Preheat oven and pizza stone to 400 degrees. Wash and cut the zucchini into wedges and place into a large bowl. Pour about a tablespoon of olive oil and toss to coat, add more oil if they are not all lightly coated. Pour in about 1/4 cup of breadcrumbs and stir until each is coated. Place on the pizza stone in the oven and bake for 10 – 15 minutes or until tender on the inside and crisp on the outside. My kids liked theirs dipped in ranch dressing.
