There’s a pasta salad that’s always served at Souper Salad. It has corn. And parmesan cheese. And fettucine noodles. It doesn’t make any sense. But, it’s the most ridiculously addictive pasta salad I’ve ever eaten. My kids will tell you the same thing. My non-corn loving husband will tell you the same thing. Magic happens when you make this pasta salad. Magic. And, you’re really only 15 minutes away from magic. Yep. It’s that easy. That good. You’re going to want this pasta salad forever. Creamy Corn & Fettucini Pasta Salad
- 1 (8 ounce) package fettucine, cooked and drained
- 1 cup mayonnaise
- Juice of 1 lemon
- 1 cup grated parmesan (use the cheap stuff in a tube)
- 1 cup diced ham
- 1 cup frozen white corn, thawed
- 1/4 cup chopped fresh scallions and parsley
- Salt to taste
- lots of fresh ground pepper
In a large bowl, whisk together the mayonnaise, lemon juice, and parmesan cheese. Salt and pepper to taste, but go pretty heavy on the pepper. Add the fettucine, and all other remaining ingredients. Toss to coat. Serve and enjoy!
