Pretzel-Crusted Chicken on a Stick with Agave Mustard Sauce

My husband, kids, and I are pretzel lovers. Aficionados may be more accurate. Call us the official “pretzel-phytes.” There is no pretzel, hard or soft, we won’t devour, especially at the circus or zoo. So for one of our Walt Disney’s Dumbo screening main courses I’m making grilled chicken skewers with a pretzel crust served with an agave mustard dipping sauce. Nothing beats a pretzel, and I’ve come up with a delicious, crunchy crust that will make your mouth water and putting it on a stick will make it fun and easy to eat.

What you need for:
Pretzel-Crusted Chicken on a Stick
1 chicken breast cut into 1 inch by 1 inch by 4 inch strips
1 egg white
1/2 cup whole wheat flour
1 cup of no salt added pretzels, crushed
2 tablespoons yellow mustard
1 tablespoon spicy brown mustard
3 teaspoons agave
Olive oil

Dredge each chicken strip into flour, followed by the egg white, and finished with a coating of crushed pretzels. Place a skewer into each strip. Heat a griddle over medium with 2 teaspoons olive oil. Place chicken onto griddle and cook for 4 minutes, turn, and cook an additional 3-4 minutes or until internal temperature reaches 165 degrees. In a bowl, combine the mustards with the agave and whisk together until smooth. Serve the strips with dipping sauce. One breast makes 6 -8 skewers – serve each person 2 skewers with 1 tablespoon of honey mustard.
