Since we have all been indulging in too much Halloween candy, it is time to enjoy a healthy salad. This salad recipe is also a great way to use up the remaining pumpkin seeds you have from the Halloween Jack O’Lanterns.
For this salad, feel free to use any lettuce you like and use pumpkin seeds that are either toasted or untoasted. To make this salad even healthier….
You can use reduced fat feta to lower the amount of fat and use a low-fat dressing.
Pumpkin Seed, Cranberry & Feta Salad (serves 4 as a side or 2 as main dish)
1 head organic romaine lettuce, roughly chopped
1 vine ripe tomato, sectioned
1/2 cup dried cranberries
2 oz. reduced fat feta
1/4 cup salted pumpkin seeds (toasted and untoasted)
