Raw Cacao Chocolate Pudding

I recently discovered how amazing raw cacao powder is! This raw food pantry staple is rich in antioxidants, magnesium and iron. Plus the flavor is incredibly pure and the texture is velvety. You can essentially use raw cacao powder the same way you would cocoa powder. But you’ll notice that raw cacao lacks the intense bitterness of cocoa powder. Raw Cacao Nutrition Facts (from the Navitas Natural bag):

2.5 Tbsp contains:

* 60 calories
* 1.5g fat
* 1g saturated fat
* 3g protein
* 4g fiber
* 2% RDA calcium
* 8% RDA iron

Raw Cacao Chocolate Pudding

19 ounces silken tofu
2 Tbsp raw cacao powder (I used the Navitas Naturals brand)
3-4 Tbsp agave or maple syrup
1-2 Tbsp coconut milk
1/4 tsp sea salt

To make:

1. Add all the ingredients to your blender. I use my Vitamix.
2. Blend and serve! You can also make this ahead of time and chill in fridge until ready to serve.
