Good news for Thanksgiving leftover lovers! We’ve discovered a new holiday for eating leftovers and it comes about halfway to Thanksgiving, making the wait a little easier to bear. That’s right, I’m talking about Easter–the holiday of lamb and ham. Now, we all know how good ham sandwiches are, but when was the last time you had a lamb sandwich? Try one and you’ll wonder why we don’t eat them more often.
We’ve come up with a pretty good lamb sandwich with leftover roast lamb, toasted bread, pickled red onions (or just regular ones), and mint yogurt sauce. The yogurt sauce is the only part that requires any work and even it’s pretty simple. Head over to Brooklyn Supper for the recipe.
