Fall is my favorite season, and I live for this in-between time where there’s a chill in the air, but we still have fresh tomatoes. I hate to see them go, so I hoard tomatoes right up until the first frost. My preference is to have them fresh, but since I’ve been enjoying them all summer, I love to change things up with a cooked tomato recipe. This hearty and delicious roast tomato soup has big tomato flavor and couldn’t be easier to make.
