Santa's Favorite Sugar Cookies: Shhh! They're Magic!

Wanting to create the very type of cookie that Santa would might adore, Mrs. Claus attempted a butter cookie four times. Some were flat. Some were bloppy. Not a one held their shape through cooking, coming out of the oven like little mini-mounds of holiday happiness. Until this recipe. This adorable little button of a cookie.

Then…imagine her surprise when she bit into one and discovered the cookies were not only flaky but surprisingly hollow?! A magic cookie for Santa, she thought? PERFECTION!  So she topped them with a glimmering icing and packed them up for the Big Man’s ride, which she’ll be tracking via NORAD’s Santa Tracker this year. From Mrs. Claus’s kitchen to yours. Merry, Merry Holidays!

Santa’s Favorite Sugar Cookies
1 stick butter, softened
1 c. powdered sugar
1/2 c. brown sugar
1/2 tsp. vanilla
dash of salt
1 c. flour
In a large bowl, use a fork to combine butter, sugars, vanilla and salt. Slowly add the flour, combining thoroughly until a thick dough is formed. Turn out onto countertop. Begin kneading until dough forms a ball. Roll until about 1/2”³ thick, cut into 1-inch circles. Bake at 300 degrees for 11-13 minutes, or just until the tops of cookies are firm to the touch. Remove. Cool. Frost with Sheeny Butter Icing.

Sheeny Butter Icing
2 c. powdered sugar
2 T. butter, melted
1 tsp. vanilla
1 T. corn syrup
1 tsp. heavy cream
In a large bowl, combine all ingredients until well mixed. If a thicker consistency is needed, add powdered sugar by the tablespoon. If a thinner consistency is desired, add corn syrup by the teaspoon. Color with your favorite icing colors, pipe, and enjoy!
