A Dozen Things to Do with a Watermelon

A watermelon has one design flaw: it’s so big, it’s often tough to get through a whole one unless you have a crowd to feed. Often I’ll wind up with a sub-par watermelon; if it’s mealy it’s perfect to whiz into a smoothie or tall, cold lemonade. If you’ve only ever eaten watermelon by the slice, here are a few new things to do with one.

Besides being delicious, watermelon is actually good for you – watermelon contains a higher concentration of lycopene than any other fresh fruit or vegetable. (To compare, 2 cups of watermelon contains about 18 mg vs. one medium tomato at 4 mg.) Watermelon is also an excellent source of Vitamins A, B6 and C, and being mostly (92%) water, it’s is an excellent hydrator important during the hot summer months when we’re all active and need to replenish our fluids more often.
