The other day I was surfing Pinterest and discovered this awesome recipe for baked eggs in red and green bell peppers. In honor of St. Patrick’s Day I decided to make them in the green bell peppers so they looked like cute shamrocks. They were so much fun that way. The nice thing about baking the eggs this way is that the pepper gets warmed through but still stays crunchy. I even sprinkled a touch of cheese on top of the eggs and it reminded me on a cheese and pepper omelet. Make these on Saturday and wish your family a happy St. Paddy’s Day!
Eggs Baked in Green Bell Peppers
1 large green bell pepper, cut into 1/4 inch slices
4 medium eggs
In a medium skillet over medium-low heat warm a teaspoon of oil. Place one or two of the pepper slices on the skillet and break the egg into them. Sprinkle salt, pepper, and a pinch of Parmesan on top of the egg and place the lid on the skillet. Allow the egg to bake for a few minutes to desired doneness. Serve.
