Everyone knows that the right dressing can make or break a salad. This versatile vinaigrette is a favorite with the young ones in my family — both to make and to eat! 

Simple Kid-Friendly Vinaigrette

Makes: 2 servings

Ingredients:
1 tablespoon rice wine vinegar
1 teaspoon shallot, finely minced
1 teaspoon grainy mustard
sea salt (to taste)
ground black pepper (to taste)
2 tablespoons extra virgin olive oil

Directions:
1. In a small bowl, mix the vinegar, shallot, mustard, sea salt, and black pepper. Use a fork to whisk in the olive oil. (For a sweeter palate, add a drizzle of honey or maple syrup.) Sealed in a jar, dressing will keep for 4 days.
2. To serve, drizzle over 2 cups salad greens. Finish with a pinch of sea salt.
