Fajita night is one of my family’s favorite dinners. I grill up some chicken, veggies and assemble a ton of great sides and everyone can choose to make whatever kind of wrap they want. It seems to good to be true but it isn’t. This easy, healthy dinner can be assembled in no time. I’ll admit, I first got the idea to do this after years of ordering the sizzling fajita platter at TGI Friday’s. I loved the way it was like a DIY dinner, but at a restaurant. I don’t serve ours on sizzling cast iron pans, but you could easily do that if you want. Keep your stovetop grill pan on the lowest heat and your roasted veggies, chicken and tortillas will stay warm for as long as you need! Here is how you can throw a restaurant-style tasty sizzling fajita night at your house:
What You’ll Need:
1 large package flour tortillas
1 red bell pepper, cut into thin strips
1 green bell pepper, cut into strips
1 yellow bell pepper, cut into thin strips
1 medium yellow onion, roughly chopped
Grilled chicken breast strips (homemade or store-bought)
Shredded Mexican Cheese blend
1. Cook the peppers and onions in a few drops of olive oil over medium heat in a large skillet. Add a pinch of salt while they cook. Once they are wilted and cooked through remove them from the heat.
2. Present a large platter or lazy susan with bowls of sour cream, guacamole, cheese and salsa. Assemble fajitas by placing warm chicken and vegetables in a tortilla then adding whatever condiments you can. Wrap up and enjoy!
