S’mores Popsicles: All the Flavor without the Campfire

S’mores are indisputably one of the most popular desserts of summer. The classic marshmallow, chocolate, and graham cracker flavor combination is a winner with people of all ages.

Over time this s’more flavor trifecta has been adapted to take the shape of other things like pie, cookies, and even smoothies. My personal favorite adaptation is the S’more Popsicle. On a hot summer day it’s cool and refreshing, yet still contains that delicious signature flavor.

The trick to making this popsicle is marshmallow ice cream. It’s not as complicated as you think, I promise! Once the ice cream is made the rest is easy. I stir the graham cracker crumbs right into the ice cream for texture and flavor. Then, when I unmold the popsicle, I dip the whole thing in magic shell chocolate syrup to give it a delicious cocoa coating.

The result is nothing short of heavenly. It is the perfect way to enjoy your s’mores, even without the campfire!

S’Mores Popsicles

Makes: 6

Ingredients:
10 jumbo marshmallows
1 1/2 cup vanilla ice cream
1/2 cup graham cracker crumbs
1 bottle chocolate magic shell

Directions:
1. First roast the marshmallows. Place them on a skewer and toast over an open flame (be careful in this step). Or, line a rimmed baking sheet with aluminum foil and place the marshmallows on top. Then turn the broiler to high. Roast them under the broiler until they’re browned (about 2-3 minutes depending on your oven). Do NOT leave the oven because they can burn very, very quickly.

2. In the bowl of a food processor or blender, mix the marshmallows and ice cream until fully combined. Then, stir in the graham cracker crumbs. Place the ice cream into popsicle molds and freeze until solid, at least 6 hours.

3. Pour the magic shell into a shallow bowl, unmold the popsicles, and immediately coat them in the chocolate. Once hardened, serve (or place them back in the freezer on a plate for later)!
