Snow White dreams of true love and finds it in her Prince Charming. This salad is inspired by Prince Charming finding Snow White in the forest and awakening her with true love’s kiss. Quinoa is becoming more and more ubiquitous. It’s creeping into everything from breakfast to dessert. This salad could be breakfast, lunch, dinner, or even a dessert. It’s that good. The cooked quinoa is tossed with sliced strawberries, crunchy tart green apples, fresh basil, and a bright lemon dressing. It’s definitely a salad to truly love.
Lemon zest adds even more bright lemon flavor to the dressing, but it’s still as simple as can be! Nothing more than lemon juice and zest, a little olive oil, your sweetener of choice, and a tiny pinch of salt. It’s amazing what a simple dressing can do to bring out the flavor of the strawberries in this salad.
Basil and strawberries go very well together, but fresh mint or any of your favorite herbs can be substituted. Herbs bring a lot of fresh flavor to salads such as these.
Lastly, I cut some of the strawberries to look like hearts to represent Snow White and her prince.
2 cups sliced strawberries
1 apple, diced
1 cup cooked quinoa
juice and zest of 1 lemon
2 teaspoons olive oil (could also use nonfat yogurt for a creamy dressing)
1 teaspoon pure maple syrup, honey, or agave nectar
small handful fresh mint or basil, chopped (optional)
Place strawberries, apple, and quinoa in a medium bowl. In a smaller bowl whisk together lemon juice, olive oil (or yogurt), sweetener, and pinch salt. Pour over the quinoa and fruit. Toss to coat. Sprinkle with chopped herbs, if desired. Serve immediately.
Yield: 4 (about 1 cup each) servings
