Have you heard the buzz about spirulina? Besides being mentioned in the now infamous Justin Timberlake Vegan-ville SNL skit “re: Spirulina all in my shake.” Spirulina a superfood worth checking out. Spirulina contains over 100 nutrients including beta-carotene, iron, vitamins B12 and K, minerals and phytochemicals. Plus it is a high quality source of plant-based, complete protein. And it actually has a pretty mild flavor despite the bright deep green-black color of the powder. The flavor is nutty, grassy and slightly sweet. It is perfect added to green guacamole! Try this recipe…

Classic Spirulina Guacamole

add-in: 1/2 cup diced tomato, diced pineapple or diced tomatillos

1. Combine all the ingredients in a small bowl and fold and mash until the spirulina blend into the mixture. Serve right away or chill in the fridge until ready to serve.
