There’s something about the holiday season that makes me crave roasted nuts. Maybe it’s because they are everywhere I look, or perhaps it’s just because they are so good. I never settle for the ones in the grocery store though, I always like to make my own. Yesterday I wanted to make honey roasted almonds, but make them have a slight similarity to peanut brittle. So I made these almonds have a thicker honey coating on them than most recipes, and gave them a raw sugar crunchy sprinkle. They are so amazing and addictive. When making them, just be sure to spread in a single layer for cooling, because they do stick together.
Sweet and Sticky Honey Roasted Almonds
1 lb raw almonds
1/2 cup honey
2 tablespoons olive oil
1/2 teaspoon salt
1/4 cup Raw sugar
1. Preheat oven to 325°. Spread almonds over a baking sheet in a single layer. Bake at 325°, or until fragrant.
2. Add honey, oil and salt to a large skillet. Heat over medium heat until the mixture starts to bubble. Whisk well. Add nuts and cook over medium-low heat for 3 – 4 minutes.
3. Add almonds and honey to a large mixing bowl and add raw sugar, toss to coat. Spread almonds over a cookie sheet lined with aluminum foil in a single layer.
4. Let cool completely and break apart.
