Sweet Potato Bites 3 Ways

Whenever I take my little guy to the store with me and he gets very excited in the produce section, running around like a wild man grabbing anything and everything. Usually I put most of it back but this time he insisted on getting a bag of cubed sweet potatoes. I usually buy them whole, but had an ah ha! moment: They would make perfect appetizers for our Kidtastic New Years Eve party! See how I transformed ordinary cubes into extraordinary bites of sweet potato goodness after the jump…

olive oil

mini marshmallows

1 tablespoon brown sugar

1/8 teaspoon cinnamon sugar

sea salt and pepper

Preheat oven to 375 degrees. Place cubed sweet potatoes on a rimmed baking sheet and drizzle with olive oil. Cook for 25 to 35 minutes or until soft and starting to brown. Remove from oven and divide sweet potatoes into 3 equal parts. Sprinkle 1/3 with sea salt and pepper, another 1/3 with brown sugar and cinnamon, and place toothpicks into each.
