The Pot o’ Gold: Simple Honeycomb CandyKelsey Banfield
On St. Patrick’s Day morning have a little fun with your kids and surprise them with their very own pot o’ gold. It doesn’t have to be anything too involved, just a simple bowl of honeycomb candy is all they need.
I first learned about this super simple recipe from Nigella Lawson. She considers it one of the easiest homemade hostess gifts and I couldn’t agree more. It really does come together in just a few minutes and everyone adores it. It is crispy and slightly chewy with a sunny honey flavor that makes it the perfect sweet nibble. On Monday I plan to set this up in a bowl for my little ones to nibble on first thing in the morning. It will be their very own pot o’ gold!
Simple Honeycomb Candy

8 tablespoons granulated sugar
4 tablespoons golden syrup or light corn syrup
2 teaspoons baking soda
1. In a small saucepan bring the sugar and syrup to a boil for about 3 minutes, without stirring, until it turns a dark amber the color of maple syrup. Then, sift in the baking soda and mix quickly. It will bubble up and foam, this is normal. Quickly, pour the mixture onto a small tray lined with parchment paper and slide into the refrigerator. Allow to chill until completely hardened, at least 2 hours. Break into shards and serve.
