To keep myself and my family from becoming Vitamin D deficient I make a big pot of mushroom soup. Mushrooms hold the largest amount of Vitamin D in a vegetable. Here in California where the sun is a blazing a lot of people cover up their skin with sunblock. A protectant of a “8 SPF” is enough to block your body from producing 98% of it’s natural Vitamin D. The sunshine Vitamin needs to be restored in another way. Fortunate for us we have mushrooms, and we can make soup.
