Quiche is one of my favorite go-to meals when I have lots of leftover vegetables from the farmer’s market hanging out in the fridge. Last week I filmed this Vegetable Quiche I made with onions, baby spinach and pine nuts. After adding them to various dishes all week, I still had some farm fresh onions and spinach in the crisper and didn’t want them to go to waste. So, I whipped up this healthy quiche for dinner and was able to enjoy it the next day for lunch as well. This recipe is adaptable and works well for all sorts of great vegetables like kale, arugula, chard, shallots, tomatoes and peppers. Have fun with it and come up with a combination you like best!
