I’m always looking for quick recipes (what mom isn’t, right?), especially during the cold, busy winter season. Most evenings I’m racing into the house with my coat still on, an hour before dinner, if I’m lucky. I’ve made a lot of one-pot dishes, but as easy as they may be, they can get a bit tiring. I mean, there’s only so much soup, stew, and casserole one family can consume. I eventually crave meals with crispy edges, caramelized flavors, and a little (ok, a lot of) crunch. Enter the “sheet pan” dinner!
If you are a fan of roasting (whether chicken and vegetables, or even chocolate!), you know how clever, yet simple this concept is. All of the components are assembled, either all at once or in stages, on a baking sheet. A high temp oven means that everything gets all nutty and deeply flavored, with those crispy edges and crunch that I crave.
This is genius, I tell you — minimal set-up and your oven does all the work. I have found this type of cooking to be even easier than stovetop, making sheet-pan meals a staple year-round (even when I get to cook with my coat off!). So trade in your pot for a (sheet) pan and make even a hectic weeknight dinner something really special.
